Guy seemed the obvious choice to tend the bar, since...he tends a bar. Even at the JL:Working Week party, when he wasn't working the bar, he was apparently bitching the whole time about how they were doing it wrong.
Tim *is* wise for his years. I think that's a huge part of his charm - he's *smart*, yes, but he's *wise*, too, and that's something different - something you earn.
